Recipe Competition – Denitsa Chuh Leva – Fresh Rice Noodles with Mediterranean Veg.
Veg: 3 coloured peppers, carrots, courgettes, ionion
Slice the peppers into long thin strips, do the same with the carrots and chop the courgettes into cubes. Chop the onions into cubes
Put a little oil (sunflower) in a frying pan and fry the onions slightly with some dry herbs (parsley, thyme savory) then add in all the sliced veg. Lower the heat. Stir occasionally till soft (10-15 mins). Just before removing it from the heat sprinkle (1-2 teaspoons) of powdered paprika and stir. As soon as it turns it colour remove from the heat so the paprika does not burn but colours the dish red. Wipe out the pan with kitchen roll. With some oil stir fry the fresh noodles for 1-2 mins – serve immediately. Eat as much as you please!
