Baked stuffed aubergine with feta, walnuts and butternut squash mixed with cumin, thyme and garlic served with butternut squash and sour cream mash and wilted spinach
Recipe Competition – Catherine Lindley – Basmati rice with raisins, saffron and grated orange rind. Mung dal and sauteed mixed vegetables.
Fry veg/steam veg – corn, kidney beans, onion and green beans- Boil water and soak noodles- Add noodles, veg and a dash of the secret ingredient (freetrade brown demerera sugar) to the frying pan- Mix together and serve
Cook onions and garlic- Add cream and small amount of butter- Oven cook mushroms so flavour releases- Add the mushrooms and fresh herbs- Serve with cumin rice and french beans
