Veggie Chilli
This recipe was contributed by Jane for our recipe competition in 2011.
Ingredients
2 cans of kidney beans
4 cans of chopped tomatoes
2 onion chopped
2 cloves of garlic chopped
2 peppers chopped
2 carrots chopped
1 chilli chopped
1 veg stock cube
Method:
- Fry onion and garlic together
- Transfer to big saucepan
- Chop all veg and add with onion, tomatoes and beans
- Add stock, bring to boil and simmer til sauce thickens – yummy
- Serve with wraps, jackets or rice 🙂
